Lamb skewers grilling over charcoal at a Kashgar night-market stall near Id Kah Mosque in evening light

Kashgar eats on Silk Road time: a polo breakfast near Id Kah Mosque, a CNY 30-50 afternoon in the Century-old Teahouse, and a night market of lamb skewers at CNY 3-6 a stick. This 2026 guide prices seven dishes, maps the Sunday livestock bazaar, and adds halal, payment and visa notes for US travelers.

Kashgar's food is best eaten as a three-stop trail: a CNY 20-30 polo breakfast near Id Kah Mosque, a Sunday morning at the livestock bazaar, then a night-market crawl of lamb skewers at CNY 3-6 a stick. Give the city two full days and budget CNY 80-150 a day.

Kashgar is China's westernmost city, a Silk Road oasis at about 1,290 meters where the cooking is Uyghur: lamb, cumin, carrot, wheat and orchard fruit, with no pork and little chili heat. The day has its own rhythm: polo or mutton soup at breakfast, the tea house in the afternoon, the night market from about 19:00. Kashgar also keeps two clocks, official Beijing time and a solar day roughly two hours behind it, so in July the sun sets near 22:00.

Seven things are worth ordering in 2026, and most cost less than a coffee at home: - Lamb skewers (kawap), CNY 3-6 a stick: order four to six each, straight off the charcoal with cumin. - Polo (pilaf), CNY 20-30 a plate: rice steamed with lamb, carrot, onion and raisins, often eaten at breakfast. - Samsa (baked lamb buns), CNY 4-8 each: crisp tandoor pastry around a juicy onion-and-lamb filling. - Laghman (hand-pulled noodles), CNY 18-32 a bowl, topped with stir-fried lamb and vegetables. - Nang, CNY 2-6 a round: bread baked against the wall of a clay tandoor; buy it warm and use it as a spoon. - Shorpa and gangzi rou, CNY 15-25 a bowl: clear mutton broth, sometimes served in a metal mug with nang. - Yogurt and fruit: thick drained yogurt, then melons, figs, apricots and grapes. A two-person dinner of one laghman, six skewers, one nang, one soup and two milk teas lands at about CNY 70-100.

Anchor your first evening at Id Kah Mosque, completed in 1442 on the central square. Visitor entry is CNY 20, with a listed window of 08:50-10:00, so see it early and return at dusk. Then walk into the Old Town, 4.25 square kilometers of free-to-walk alleys, along Wusitangboyi Road. About 200 meters in, at the corner with Caibazaar Road, the yellow building with the carved veranda is the Century-old Teahouse. A pot of Fu brick or rose tea costs CNY 20-50 with refills, rock sugar about CNY 5, naan from downstairs CNY 3-5, and a CNY 10-20 tip is welcome when the old musicians play. Budget CNY 30-50 a person between 15:00 and 18:00, when light slants across the veranda. Later, the night market opposite the mosque starts about 19:00 with skewers, roast buns, hand-grabbed rice and mian fei zi.

To see where this food begins, give one Sunday morning to the livestock bazaar on the northwest edge, about 10 kilometers from the Old Town. A taxi takes 30-40 minutes and costs CNY 30-50 one way, and the return is the hard part, so agree on a price for the driver to wait 90 minutes. Traders arrive around 06:00, trading is busy by 08:00, the golden hours are 09:30-12:30, and by 14:00 the pens are nearly empty; arrive between 08:30 and 09:30. Stalls around the pens feed the herders: skewers cut from meat butchered that morning, gangzi rou, polo, samsa and yogurt. Sunday is the main day, and some 2026 listings add Thursday, so confirm with your hotel or driver. Wear shoes you do not mind ruining, and carry tissues and small cash.

Four practical notes make eating easier. Payment: Alipay and WeChat Pay QR codes work at almost every stall, but the bazaar's signal is patchy, so carry CNY 100-200 in small notes. Halal: the city is overwhelmingly Uyghur and Muslim, so almost every restaurant you seek out is halal, with no pork and rarely alcohol. Spice: say 'bu la' for not spicy and 'wei la' for mildly spicy before the wok, because heat is added rather than built in. Vegetarians: order laghman without meat, vegetable polo, cold noodle salad, naan and yogurt, and point at a picture menu. Food is cooked to order, but the risk is richness, so drink tea between rounds.

Reaching Kashgar is part of the plan. Flights from Urumqi take about two hours and cost CNY 600-1,200 in season, and Kashgar Laining Airport is 10 kilometers north of the Old Town, with a CNY 10 shuttle and a taxi for roughly CNY 10. The 1,475-kilometer train is the slow, scenic option: Z6516 leaves Urumqi at 20:40 and arrives at 08:10, 11 hours 30 minutes, with hard sleepers at CNY 317.5-436 and soft sleepers at CNY 484.5-497.5. April-May and September-October bring mild days and the fruit harvest; July-August is hot, and December-February is cold and quiet. Ramadan shifts about 11 days earlier each year, roughly February 7 to March 8 in 2027. US passport holders need a Chinese visa for Xinjiang: the 240-hour visa-free transit covers 60 ports in 24 provinces, and Xinjiang is not one of them.

Two days let you eat Kashgar properly: one afternoon in the tea house and the Old Town, one Sunday at the bazaar, and a night market between. Tell ChinaMira your dates and dietary needs, and our Xinjiang specialists will build the food trail into your itinerary, with the right stall at the right hour and a table held for Eid.
